Sometimes getting dinner on the table seems like an impossible task after a hectic day. Although it can be a challenge to find fresh ingredients sometimes, we always manage to get at least one healthy food item on the dinner plate. My creative needs can be satisfied in the kitchen, and when I don’t have the ingredients I am looking for it forces me to invent new dishes, and we never eat the same thing twice.

When I really look through my cupboard, sometimes I discover what I have been ignoring, like LENTILS! Lentils are high in fibre and full of iron, magnesium and folate. They are low in cholesterol and give you energy to burn while stabilizing blood sugar.

My most recent creation is a delicious Curried Lentil Salad that left my family asking for a more, and it tastes even better for lunch the next day. I hope that you and your family enjoy it as much as we did!

Curried Lentil Salad
1 small onion
2 cloves of garlic
Green pepper
Curry powder
Chicken broth
or vegetable broth
Pea Shoots
Olive oil
Guava Jam
Red pepper flakes
Salt & pepper
